In our parish of Banagher we have a reservoir know as Banagher Dam. it supplies drinking water to the people and to the local brewers in the area. We use a local craft beer to wash the cheese wheels when they are just made and during aging. This brings added flavour to the cheese and creates a distinctive orange colour to the rind as it ages. The beer enhances the cheese’s big flavoured boldness.
Great serve on cheeseboards, on burgers, or atop a slice of an artisan Irish black pudding. melt in a toasted sandwich or add to a cheese fondue.
