We collect our goats milk from neighbouring Craigbane Goats Farm a few miles down the road. the fantastically rich milk they produce gives us this fresh lemony delicate cheese. When allowed to age for a few weeks more it develops a beautiful wrinkly rind, a cream line develops and the flavour strengthens.

Serve scattered across a fresh beetroot salad or vegetable tart.

Partner with a medium dry cider, or a Sancerre
