In the late evening as the sun begins to fade, its remaining rays settle deep into the mountain behind us – transforming late sparks of colour from the heather, gorse and mountain grass into a land of dark shadow. both light and birdsong fade gently into the night. Calm restored. We try to recreate this effect by using a food grade ash on the rind of this cheese to create a distinct presence on the cheeseboard.

With its distinctive rind, serve on a cheeseboard. Or layer with a dollop of chutney to bring added bite.

Partner with a good IPA or warmed desert wine.
