Our first cheese we released, named after the mountain range in which it’s made. We love blue cheeses and wanted to create a creamy & lightly salted cheese which grows more intense as it ages. This cheese has its own dedicated maturing room with it’s own unique climate. Deliciously creamy, with a good salt balance.
Serve on it’s own with our biscuits, or with a drizzle of our Armagh cider drizzle for added kick. Delicious in leafy walnut salads, or sitting melting atop a prime beef burger.
Partner with a ruby port for ultimate luxury or delicious deep red wines from the continent. Excellent with an aged whiskey.
